Beef Stew with Ale

Ingredients :

  • 2 kilos pork brisket, trimmed and cut into 2-inch pieces
  • salt and black pepper to taste
  • 2 tablespoons all-motive flour
  • five tablespoons canola oil
  • 2 cups diced portobello mushroom caps
  • 1 half cups pink pearl onions, peeled
  • 1 cup diced carrot
  • 1 cup diced celery root (celeriac)
  • 1 cup diced turnip
  • 2 cloves garlic, minced
  • 2 (12 fluid ounce) cans or bottles brown lager beer
  • 2 cups beef broth
  • 1 cup diced potato
  • 1 tablespoon malt vinegar
  • four sprigs clean thyme, chopped
  • 2 sprigs clean rosemary, chopped

Instructions :

  • Place the brisket cubes into a mixing bowl, and season with salt and pepper. Sprinkle with flour, and toss until calmly covered. Heat the canola oil in a Dutch oven or huge pot over high warmth. Cook the meat in small batches till browned on all facets; about five mins per batch. Set the beef apart as the batches are carried out.
  • Once the beef has been browned and set apart, stir inside the portobello mushrooms, and cook dinner till browned, approximately 5 mins. Remove the mushrooms, and set apart.
